Thrilled to be back, flattered to be thought of as crazy

                         Gluten Free French Cocoa Almond Donut with Grass Fed Butter
Well " Hello there to you." We're back and really " If I can make it here, I can make it anywhere"
may just be referring to our recipes. Lately I've been experimenting with gluten free treats. I can't recall why I got into it so maybe I'll include ginkgo in one of them. All joking aside, I really enjoy
The different combinations, but most of all, how I feel. I dropped 15 pounds and I eat one of my donuts or other treats for breakfast. The almond flour I use is full of potassium and protein so I feel full and get a great start without the guilt. I can't stop my daughter from making them either, which iis a testament to just how easy they are. One of the recipes follow. Hope you enjoy it!

                        Gluten Free French Cocoa Almond Donuts
Preheat 350

                        1 cup plus 1 T. Almond flour
     
                         1 T. coconut flour

                         1/4 cup French cocoa powder

                          1/2 t. Baking soda

                         1 T. Vanilla

                        4 organic eggs

                         1/4 cup oil ( I use coconut oil, or canola)

                        1/4 cup plus 2T. Sugar of your choice


       Method

                       Throw it in a blender,

       Spray donut mold with coconut oil spray or other spray

       Pour mix in molds and bake about 12 min or until they bounce back when pressed.

        Makes 6 donuts

  1. Really, lots of potassium, eh? That is good, I'm sick of eating kale and guacamole! (not really....but a good excuse to try a new recipe!)

  3. Almond flour is usually called almond meal here. It's delicious & not particularly expensive - you can buy it at many supermarkets nowadays (even in Cheso). My favourite is still spelt, though. Spelt spaghetti is wonderful....
